At  SAGARDI Group we change the menus with the season products, and now it is the time of the amazing vegetables from the gardens of Tudela. A unique produce from the best Basque farmers.  The artichokes of Tudela, the cardoon, the borage and the chard take center stage, along with other classic dishes of the Basque cuisine.

A exceptional combination of  vegetables, direct from the garden to the table, without complications. They are undoubtedly the queens of the season, a product of great quality.

They come from organic farming and our own gardens, the key to obtain a fresh and tasty product, that we cook with simplicity, as it has been done since forever in the traditional restaurants of the Navarrese riverside. At its right point of cooking to preserve all its flavor, virgin olive oil, salt and that’s all.

Basque tradition

For this change of menu we have recovered one of the great classics of Basque cuisine, the breaded and fried hake with fresh piquillo peppers. An authentic treasure of the Basque grandmothers that oozes tradition and Basque flavor. Hake that arrives us directly from the port of Pasaia, one of the most important Basque Country ports, a soft batter to preserve all its flavor and the simple accompaniment of our classic fresh piquillo peppers.

From the sea also comes the fresh anchovy of the day, which we prepare in the bermeana style, as it is traditional at Sagardi, but now also in a simple and delicious dish. A fresh anchovy omelette, freshly caught, lightly stir-fried in a good olive oil and in a simple omelet. Never something so simple had so much flavor.

Other Basque classics that you cannot miss are the Chard leaves stuffed with “txangurro” with a delicious American sauce at ORIO Gastronomía Vasca or the traditional “Pocha” white bean stew with clams at IRATI Gastronomia Basca.
