Every day, our menu features the best products from our gardens and farms and the Basque coast, fresh and varied products crafted with the utmost respect and with sensitivity to extract their best flavour and texture, always accompanied by the best wines and hard ciders from the Basque Country.

Seasonal products

Our seasonal menu contains the best products of the Basque Country and the most classic dishes of the Basque cuisine. Fresh vegetables ecologically farmed in our own gardens, spoon dishes such as the classic Basque marmitako, the indispensable cod, grilled, fried or stewed, or the impressive “morcilla” (black pudding) from the Basque charcuterie master Kepa Loidi.

Whichever seasonal delight you choose, don’t miss SAGARDI´s classics, like the grilled wild fish from the best Basque fish market or the txuleton, a sublime aged beef cut always served with a side of Basque pride.
